Whisk everything to combine.Cut the bread into medium – sized cubes and add to the bowl, gently folding to coat.Spread into the baking dish evenly.Bake for 30-40 minutes.Serve warm with maple syrup and fresh banana slices! Recipe #7: Sweet Potato Kale Frittata Ingredients: large eggs - 6half-and-half - 1 cupKosher salt - 1 tsp.freshly ground pepper - 1/2 tsp.sweet potatoes - 2 cupsolive oil - 2 tbsp.firmly packed chopped kale - 2 cupssmall red onion - 1/2garlic - 2 clovesgoat cheese - 3 oz. Steps: Preheat the oven to 180 degrees celsius.Blend the eggs, salt, pepper, and half and half together.Sauté sweet potatoes in hot oil (1 tablespoon) in a pan over medium heat until potatoes are golden.Remove and keep warm.Sauté kale, onion and garlic in the remaining 1 tablespoon oil 3 to 4 minutes or until kale is tender.Stir in potatoes.Pour the egg mixture over the vegetables, and cook for three more minutes.Sprinkle the egg mixture with goat cheese.Bake at 350 degrees F for about 14 minutes or until set.
